Finally Fall!

Most likey because I'm an Autumn baby, having been born in November, but I LOVE FALL. The summer is often too hot and stuffy and steamy that it can get uncomfortable. But fall. Fall gives us those wonderfully comfortable cool days, the beautiful scenery of the colorful fall leaves, the nostalgic memories of back to school and hay rides and all the fun of pumpkin picking and Thanksgiving dinners!

This year I decided that I wanted to start on a collection of fall decor. Since Im now a wife and a soon to be home owner I feel this is my time to really up the anty on decorating my home!

Ive gotten only a few things but each is beautiful and adds such a fall-y feel to our home and I cannot wait to continue to use these things in our new home come auntumn next year!

Mad Macaroons

This weekend was extremely relaxing! Although MDH had to work I still enjoyed the alone time! While doing a thurough cleaning....kinda....I happened to catch Barefoot Contessa on the television and noticed she was baking up some pretty fancy cookies on this weeks episode. I got inspired. I immediately dropped the counter cleaner, (Mrs. Meyers is my absolute favorite these days!) and I headed to my baking cabinet to whip up a quick batch.

I dont have a wide range of cookie recipes on the top of my head but my husband did get me an awesome cookie book last Christmas in which I found a recipe for Macaroons! I had never tasted Macaroons before I celebrated Passover at my current job location and I fell in love!

I went for both a chocolate and vanilla batch. Here is the recipe I used:

3 cups flaked sweetened coconut 1/4 tsp. salt
1/4 cup sugar 1 tsp. vanilla
3 large egg whites 1/8 tsp. almond extract

1. Preheat oven to 325 f. Line two cookie sheets with parchment paper or foil.

2. In a large bowl, stir coconut, sugar, egg whites, salt and vanilla and almond extracts until well combined.

3. drop batter by rounded teaspoons, one inch apart, on two prepared cookie sheets. Bake until set and lightly golden, about 25 minutes, Cool 1 minute on cookie sheets. With wide metal spatula transfer cookies to wire racks and cool completely.

My results were beautiful.
----------Although it didn't look like so on the cookie sheet.
For some reason it got all slimy while baking. Im not sure if I had too much of something but there was a small puddle of stickiness around each beautiful macaroon.

But the good thing is the the final result was delightful and my first shot at macaroons was a success in my book!

Beautiful Beginings!

Wonderful news!

Putting up the SOLD sticker was a GREAT FEELING!

My husband and I are building our first home! I couldn't be more grateful, excited, thrilled, or any other words that could possibly described this blessed time in our lives. It all started Memorial Day weekend when we decided to go check out some model homes around our area and then we found something that just worked out absolutely perfect. It fit our expectations, budget, size needs and also was in a beautiful neighborhood that we knew we would enjoy being a part of both now and years ahead!

We are building which adds a whole lot more to the whole new home owner process but it is so worth it! Picking out our flooring, cabinets, countertops, paint colors, siding and SO much more! Its truely a dream come true building my first home with my wonderful, wonderful husband. It really can't get any better!

This new chapter is starting out beautifully and I cannot wait to see how this whole process will pan out. Its been smooth sailing so far snd I know that with my amazing husband, supportive family and awesome God this will be another peice to this exhilarating puzzle my God has planned out as my life!

Its just the begining, and a beautiful one for sure!
